My flat-mate Hannah of foxtail and fern and I decided that, since we were all alone in the flat (the other 3 are at home or visiting boyfriends), we would make all of our dinner from scratch.  So we made carrot and coriander soup (for the first time!) and this baby:

We made (also for the first time) banoffee pie!  It.  Tastes.  Amazing!  Really sweet, though, so we can’t eat much.  Shame 😦


  • 300g Hobnobs (nom nom)
  • 60g melted butter
  • 1 tin of Nestle Caramel (397g)
  • 3 bananas
  • 290ml double cream
  • 3/4 tbsp icing cream
  • 2 Flakes (to sprinkle on top)

Preheat oven to 180C.  Crush the Hobnobs (I do it in a sandwich bag.  Way less messy).  Mix in the 60g of melted butter and spread it into the bottom of an 8″ spring-form cake tin.  Cook for ~10 mins.  Remove from the oven, leave to cool and then spread the caramel over it before placing in the fridge for an hour.

Whip the cream and sugar together.  Place the bananas evenly over the caramel before adding the cream and then sprinkle the flakes on top.  Enjoy!
