I made brownies for the first time in ages the other day.  It turned out more like cake (I couldn’t find any square tins so I made it in a round one) and it has given me so many ideas for new cakes.

That’s the only photo I managed to get of it before my flatmates pounced (yes, that is a finger-hole in the middle).  Onto the recipe!

  • 140g unsalted butter
  • 280g granulated sugar
  • 80g cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 65g plain flour
Set oven to 160C.  Grease an 8in cake tin (square, circle, it doesn’t really matter.  Depends on the shape you want).
Put the butter, sugar, cocoa powder and salt in a bowl and place it over a pan of boiling hot water.  Stir every now and then until the butter has melted and everything is mixed together (it’s supposed to look gritty so don’t worry).  Remove from the water and let cool until warm.
Stir in the vanilla, then the eggs – one at a time – stirring vigorously after each addition.  When everything is mixed together, gradually add the flour in batches and combine nicely.  Pour into your prepared tin.
Cook for ~25 minutes (the oven in my flat is a fan oven so it’ll probably take longer if you’ve got a non-fan oven).  After the brownies have been out of the oven for ~5mins, transfer to a wire rack and put in the fridge for about 10 minutes (if you get the chance before your friends pounce).
