Finally!  A new recipe!

Although it’s not much of a recipe…

I was bored this morning and wondered what I could do with an apple.  Et voila!

Apple cupcake!

Basically, cut the top off of an apple and scoop out all the insides (I found an ice cream scoop worked really well for this), then fill it with any yoghurt of your choice (I used Greek yoghurt with honey – love the stuff!) then top with any icing of your choice (I cheated and used Betty Crocker’s ready-made buttercream).

Or, if you like, you could leave off the icing and just have an apple bowl.

It tasted so good!  Although I wouldn’t really recommend adding the icing if you want it for breakfast.  It was a wee bit too sweet…
