Please ignore the burnt crust.  It was my first attempt at making pastry.  But it tasted really good.  Not as good as the sweet potato bit but still.  I’ll definitely have to make this again (and, this time, perfect my pastry!)

For the Pastry:

  • 500g plain flour
  • 350g butter (or 175g butter and 175g vegetable shortening)
  • 3 tbsp granulated sugar
  • 2 tsp salt
  • 1 medium egg
  • 120ml water

 For the Filling:

  • 600g sweet potato
  • 120g butter
  • 200g granulated sugar
  • 120ml milk
  • 2 medium eggs
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract

Heat oven to 220oC.  Put sweet potatoes in oven and cook for 40-50 minutes.  After taking out of the oven, remove skin and lower oven temperature to 180oC.

Meanwhile, to make the pastry, mix the flour, butter/veg. shortening, sugar and salt together in a bowl until crumbly.

In another bowl, mix the egg with water.  Mix this into the pastry mixture.  Roll out the pastry until it fits a 10in pie dish.

Once the sweet potato has cooled, break it apart in a bowl and add the butter, mixing it in well.  Gradually add the sugar, milk, eggs, cinnamon and vanilla.  Mix until completely combined and pour into the prepared pastry base.  Cook for roughly 45 mins, or until a toothpick comes out clean.
